Jay,
I put in new discs and pads yesterday then bedded them in and I'm experiencing exactly the same feeling as you!
I've come from yellow stuff on old discs that previously ran Audi crappy pads, so was unsure if they should feel this way or not.
Hopefully as John said they will improve with time and usage.

I did the bedding in procedure last night quite precisely over about 12 miles up & down the same carriage way. First thoughts on these feels a lot more spongy on the pedal, but I'm assuming once that initial layer on the face of the pad comes off then all should be fine? Or is this the norm? Perhaps I'm just not use to an alternative pad combination.

As the pads wear down past their initial shoulders they get better. I would say they are a more progressive pad as first but once you get some miles on them they bite from the top of the pedal.

Has anyone compared yellow/red stuff against Ferrodo DS2500 pads. On my focus ST they were miles better than anything EBC offered.

All good stuff but I'm really concerned about how darn clean some folks can keep their working parts. Do you all live in a dirt, dust and rain free environment?? :)

After my recent success in obtaining decently priced new front discs (thanks for the info T-800) I'm about to give them the once over with some POR15, Red Stuff pads are on the way from the Yoo Ess Ayy and then we fit and enjoy.

Can't wait - the 14000 miles on the last set are beginning to show.

Had a nice long drive today and the pedal felt much better. Early days or maybe the placebo effect but nevertheless I'm happy. Next on the list is to clean up them rusty rear hubs with POR15 silver and clean the front spiders up with autosol.
What's the best method of attack? Wire wool? Then coat the hubs? I have clear POR15 too will that not be worth sticking on the spider?

As for track - don't quote me on this I believe yellows are more durable for track but not for road use. I'm sure one of the other lads will be helpful with this.

Redstuff on 4 pot calipers are not track recommended. I set fire to the pads round Castle Combe. Tbf it was just the red paint on the back of the pads that went and they kept their bite till the end of there usable life and fell out of the calipers. I'm now on Yellowstuff with 8 pot calipers there noisy dusty and don't have the bite of the Reds on the 4 pot. I haven't had to properly stand on the new brake setup there feels to be more pedal travel less initial bite but great modulation. I think they'd be effective if pushed.

Sensor slot is for the brake wear sensor. If you don't buy the pads with the slot then you'll have to link the original sensor out or disconnect it and use VCDS to code it

Really unsure what to do about brakes. From 130 town to 50 they were really good, then there was brake fade from 50 down to 0. Need to upgrade something surely just a better pad? Will be doing some track based stuff (including Nurburgring in 3 weeks). What do people recommend?

There lies your problem, as you'll have read the Audi Pads are shocking in every aspect.
Upgrading to the 8 pots will ultimately give you the most fade resistant and arguable best performing setup.
Of you don't want to stretch the budget then go for red stuffs (best for fast road) and maybe a seperate set to drop in for track work as unfortunately you can't have best of both.
I'd strongly advise tat regardless of what you do at the front you upgrade to red stuff pads at the rear. I did this icw fitting cross drilled discs and I can safely say they have improved the braking no end. Makes me think the standard rear set up was doing next to nothing
